Cook the rice and leave to cool.
Cut the mango, avocado, cucumber and carrot into small, bite-sized pieces.
Serve the rice as a base and add the mango, avocado, cucumber and carrot on top.
Cut the tofu into bite-sized pieces and place in the preheated pan with the oil.
Deglaze the tofu with the soy sauce and add a little pepper.
When the tofu is toasted, remove it from the heat and add it to the bowl.
Garnish with spring onions and optionally some sesame seeds.
You can add a little soy sauce and/or Sriracha as a sauce and mix well.
